Mason Jar Salad
  • Dressing- makes 1 cup
  • ½ cup Greek Yogurt
  • ¼ cup Sunny Olive Blood Orange Olive Oil
  • 2 Tbsp. Sunny Olive Alfoos Mango White Balsamic
  • 2 Tbsp. Honey
  • 2 tsp grainy Dijon Mustard
  • 1 tsp minced shallot
  • ¼ tsp salt
  • Salad
  • 1 cup baby spinach
  • ¼ cup chopped walnuts
  • 2 Tbsp. dried cranberries
  • 1 Tbsp. sunflower seeds
  • ¼ cup chopped carrots
  • ¼ cup chopped red bell pepper
  1. Whisk together all ingredients for dressing and pour the dressing into the jar. Place the walnuts, then cranberries and sunflower seeds, then carrots, and the red bell pepper in the jar. Top with bite size pieces of clean, dry spinach and the poppy seeds. Make sure to put the lid on tight and when ready to eat, shake the jar well to coat spinach and enjoy!
